The lid covers the tray to keep water in to stop spills during transport and lock out unwanted freezer tastes and odors. Fill the tray, replace the lid tightly, and freeze on a flat surface. Remove the lid and push each cube from the bottom to release them. Dry the outside surface before refreezing.
